Roxanne's Mother's Peanut Butter Fudge
Do you remember school fudge? I used to love it when it was on the dessert menu.
My Mom, Mary Eikenberg Marsiglia, found a terrific recipe for this kind of peanut butter fudge, and I thought I would share it with each of you! It really is yummy and she says it is very easy to make. I hope you enjoy it.



INGREDIENTS:

3 cups of sugar
3/4 cup of butter
2/3 cup of canned milk
1 jar of Marshmallow Creme (small or 7 oz jar)
1 cup peanut butter
1 teaspoon vanilla

1. Mix sugar, milk, butter, and vanilla in a pot, stirring constantly over medium heat.
2. Bring ingredients to a rolling boil and cook for 5 minutes, stirring the entire time. You may have to increase the heat slightly but do so gradually and be careful not to let the bottom burn.
3. Remove pot from stove; add peanut butter and marshmallow creme.
4. Beat with electric mixer until mixture is well blended.
5. Butter a 9 x 11 pan. Pour contents into pan and allow to cool before cutting.
