It's kind of funny and ironic that I would include anything that closely resembles cooking on my website because I have never liked to cook! But that said, I have also been quite lucky enough to be surrounded by great cooks in my family and also my friends. That means I became a professional "taster" for the dishes that were prepared. . .
This little mixmaster picture immediately reminded me of my grandmother, Rosalie Wisner Eikenberg (a.k.a. "Meemaw) when I saw it, and it is just a little homage to her that I picked it for the "Cook's Corner".. For when I was growing up I went to her home every day after school and she was always elbow deep in flour and sugar. Her kitchen smelled like magic, and she was the perfect grandmom. Thanks Meemaw - you made things perfect.

Meemaw's Sweet Rolls
This is something I remember as a kid - the smell of those wonderful rolls as I came through the door for dinner. If they're made correctly, they stand about 5 inches high when baked, and they are so good you don't even need butter for them. This bread recipe has been in our family for years and years. No one really knew how to make this until my Mom went behind Meemaw with measuring cups and wrote it all down. It was with my mother's permission that I am placing this up on the site. I wanted to give you something special from our house to yours. It is also a little selfish too - because I know that my Meemaw's recipe will now live in lots of homes. It just keeps her around a little bit.

Lena Pfeffer's Vegetarian Noodle Kugel
My friend in New Jersey, Lena Pfeffer, gave me this recipe by request. She made this for me when I visited her home for dinner (a vegetarian, no doubt) LOL and it was absolutely wonderful! It is a good thing I can't cook very well . . . or I'd be the size of a barn door eating this all the time!

Meemaw's Spritz Cookies
These are like butter cookies (sort of), but they are more "short" as my Mom says... Kind of slightly crispy, they almost remind me of Lorna Doone's, but still different. This is my favorite Christmas cookie. These could always be found in Meemaw's closet in the big plastic bowl.

French Chocolate Tortoni
This is a great recipe for anyone who is NOT Julia Childs! LOL I use this all the time because it is easy - it just doesn't taste like it. A cross between ice cream and pudding, this chocolate treat is great with many entrees.

Roxanne's Mother's Peanut Butter Fudge
My Mother's fudge recipe is the easiest I've ever made. And trust me, I'm NOT a good cook and everybody loves it. I serve this as one of the sweet treats when the ladies come and paint in my home studio and there's barely any left at the end of the day! YUM.
